A special gift for a special friend......

We became friends from the first day we set sight on each other.It was way back ...... in 1994.There she was,silent & calm-ditto opposite of what I was.Yet we just loved being with each other.I lived in Rambaug Lane no:4,she,in Rambaug Lane no:2.Seeing each other on the road would make us jump with glee.I loved being in her house,if it was not for that big black (and really scary) cat,with dirty(& scarier) greenish yellow eyes.I'm afraid I've rather developed a prejudice against CATS!!!Cat-lovers,if you would excuse me for saying so , I HATE CATS!!!

Ahem,so coming back to the dear friend,here's wishing you a verrrrrry HAPPY BIRTHDAY! I thought of baking you a cake,but then decided against it , because I know you don't like milk, and for me cakes are nothing without it .But I also know,you loved paneer and butter.I don't know if you still like them ,but the last few times I saw you,you were gorging on the paneer in palak paneer and just polishing off the cover of Amul butter. I also know your Mum makes delicious sandwiches and you love them(and I'm really very sorry for finishing out your dabba in school;I still remember how the next time you got sandwiches,you asked Aunty to pack a separate dabba for the rest of us!!!)

Pooh! Nostalgia , its brilliant and powerful- makes me smile,laugh,frown ,cry and many more things.

So, I customised, nay, concocted a different recipe to combine all your favourites into one single dish.I dunno if you get time to cook with studies and all, but I hope you will try it in leisure.I sure loved making them for you and enjoying them myself !!!



PANEER SANDWICHES:

You will need:

Brown bread - 4 slices

Onion(chopped) - 1 no

Paneer cubes -as many as you like,( for 'to-the-T-followers', about 8-10)

Oil-1 tbsp

Cumin,Mustard - 1/2 tsp each

Tomato ketchup - 2 tbsp.

Butter - 2 tbsp.

Shrikhand- 2 tbsp.(add 2 more if you like to lick it off like me)

Coriander - 2 tbsp(finely chopped)

Cheese - 1 cube(grated)

Pav Bhaji masala - 1 tsp.

Amchur Powder - 1 tsp.

Salt & Sugar - a pinch each





Procedure:

1.] Trim the sides from the bread slices.



2.]Apply butter on one slice and shrikhand on the other .(Don't be kanjoos,you'll get a lovely Salty-sweet taste.But in case you aren't a 'Britannia 50-50' fan like me replace shrikhand with butter.)



3.]Now, time for the filling:


Heat oil in a wok.Add cumin,mustard and let splutter.Now add Pav bhaji masala,amchur powder and some salt and sugar.Stir well.Throw in onions,let them turn to a golden brown colour.Now add tomato ketchup and paneer cubes.Keep the flame on SIM level.Once the paneer is a little browned,turn off the flame and let the filling cool.

4.]Take the buttered slice and place 2 tbsp. of the prepared filling on it.Sprinkle grated cheese and chopped coriander on it.



5.] Cover with the other slice of bread and toast it on both sides with plenty of butter.A variation here is to fold a single slice into half and toast it.


6.]That's it.Serve garnished with coriander & lots of love.
